I have a s7 plus ecu the lambda readings fluctuate while sensor plugged in the voltage jumps around all over the place. I tried 3 sensors same results . I even pinned 6 wires direct from ecu to the sensor and same issue. Has anyone come across this issue? Could it be the ecu internal Wideband controller fault?

I haven't tried with the wrong sensor type, but are you using the correct sensor that your S7 Plus has been set to use? It has internal solder bridges that select between the NTK and LSU-type sensors.
